Mallee is a type of eucalyptus that grows with multiple stems from an underground lignotuber, usually to a height of no more than 10 metres. South Australia coastal mallee (Eucalyptus diversifolia) occurs extensively on Kangaroo Island where it grows as a small tree and produces a highly fragrant white to cream-yellow flowers between July - September or December – January. The honey produced from coastal mallee has medium amber colour and full flavour.
