Sugar gum is a eucalyptus tree (Eucalyptus cladocalyx) native to South Australia. The plant flowers annually between January – March. Sugar gum is found on the southern Flinders ranges, Kangaroo Island and Eyre Peninsula, Australia. It appears that Kangaroo Island is the only area where sugar gum honey can be harvested as pure honey on an annual basis. The honey is light yellowish in colour with a delicate sweet flavour.
